Here are five easy, 20-minute recipes for anyone short on time, looking to eat healthier, or just starting in the kitchen!

1. Ayran Aşı (Cold Yogurt Soup)

Ingredients:

  • 100 g yogurt
  • 15 g boiled chickpeas
  • 25 g boiled wheat
  • 5 g fresh mint, chopped
  • 150 ml water
  • Salt to taste

Preparation:
Whisk the yogurt with water, then add the boiled ingredients. Season with salt and add the chopped mint. Serve chilled.



2. Zucchini and Carrot Tarator

Ingredients:

  • 50 g grated carrot
  • 50 g grated zucchini
  • 100 g strained yogurt
  • 10 g walnuts, chopped
  • 5 g dill, chopped
  • 10 ml olive oil
  • Salt and black pepper to taste
  • 1 clove garlic (optional)

Preparation:
Sauté the carrot and zucchini with garlic in olive oil. Season with salt and pepper. Let cool, then mix with yogurt and dill, garnish with walnuts, and serve.



3. Lavaş Pizza (Margarita)

Ingredients:

  • 1 tortilla (30 cm)
  • 25 g grated tomatoes
  • 15 g chopped onion
  • 5 g garlic, minced
  • 5 g fresh basil, chopped
  • 5 ml olive oil
  • 25 g mozzarella cheese, grated
  • 2 g dried oregano
  • Salt and black pepper to taste

Preparation:
Sauté the onion with grated tomatoes, basil, garlic, oregano, and olive oil until it becomes a sauce. Place the tortilla on a pan, spread the sauce, sprinkle mozzarella cheese on top, and cook with the lid on until the cheese melts. You can add any other toppings you like.



4. Cauliflower Fritters

Ingredients:

  • 100 g boiled cauliflower florets
  • 1 egg
  • 10 g flour
  • Salt and black pepper to taste
  • 10 ml milk
  • 50 g yogurt (for serving)
  • 100 ml oil (for frying)

Preparation:
Cut the cauliflower into small florets. Mix flour, egg, milk, and spices into a batter. Heat the oil in a frying pan. Dip the cauliflower florets into the batter and fry until golden. Serve with yogurt.



5. Creamy Baked Potatoes

Ingredients:

  • 200 g potatoes, thinly sliced
  • 80 g cream
  • 10 g onion, chopped
  • 1 clove garlic, minced
  • 15 ml oil
  • 20 g grated cheddar cheese
  • 5 g paprika
  • Salt and black pepper to taste
  • 5 g fresh basil, chopped
  • 5 g parsley, chopped
  • 20 ml milk

Preparation:
Sauté the onion and garlic in oil. Add cream and milk and bring to a boil. Add the potatoes and simmer on low for 15–20 minutes. Arrange the potatoes on a baking tray, top with cheddar and paprika, and bake at 180°C (350°F) for 25-30 minutes until golden.
